Supawit “Palm” Muttarattana

When the BAD Awards voting panel convened to nominate their picks for “Bartender of the Year,” one name stood out well above the rest for the 2025 awards: Supawit “Palm” Muttarattana. 

With a career spanning around two-decades, and much of it at the city’s top nightlife institutions like Rabbit Hole, Vesper, and Fuchsia, Palm has built up a staggering portfolio of consulting assignments, bartending positions, and accolades. He won the coveted Diageo World Class Thailand in 2012, and went on to compete in the global competition later that year. In 2019, he picked up top honors at the Campari Bartender Competition Asia. Most recently, him and his team at Dry Wave cleaned up at the Bangkok Bar Show, earning the show’s top bar ranking. 

With Dry Wave, his first step-out into headlining a venue all his own, he was finally able to follow his own vision, which he says was hanging around in his back pocket for years before he pulled trigger. 

 “When consulting for other businesses, you have to follow the briefs and creative suggestions. But when running your own place, all the elements should tell a story of who you are,” Palm told BK in April 2024 shortly after the bar opened. 

Palm and his team spent eight months developing the very first “Super Classic” cocktail menu, which pairs two classic drinks together into a single concoction. It’s a very on-brand style for Palm, who has stated many times in the past how classic cocktails have had a deep impact on his bartending philosophy. The Super Classic menu, although simple in concept, was indeed something novel in the Bangkok bar world—a tall feat for a city so in love with mixology—and the results were magic in a glass. 

According to a January interview with Prestige Thailand, Palm plans to slow things down in 2025, focus on himself and family, and has mentioned aspirations of giving back to young mixology aspirants looking for direction, citing a lack of proper training programs.
